It's actually very simple to understand how and why this happened. Most of a chicken's functions are located within the brain stem and Mike's brain stem was left mostly intact even without his head. He was still able to survive because of his brain stem which controlled his heart, lungs, etc. There was also a clot which stopped him from bleeding to death. It can all be explained scientifically.
