Dammit, i'd LOVE to do stuff like this. I'm pretty much the same standard bass-wise, and can write music until the cows come home, but it's the programming of beats that I have NO idea about. I tried Ableton, but it gave me a nosebleed. I'm old-school in the sense of the typical "band" enviroment, rather than programmed stuff like this. I love it. If any one creates D&B, but wants real bass over the top, please give me a shout!
use Kinetic 2 from sony. it'll take a while to understand but it's great for drums. it has so many samples from drum breaks like amen and the step recording lets you get really accurate (down to 128th beats!) It does melody too, but it's tough... i can make some dnB loops, post them on my soundclick profile and you can download them.
A good friend of mine got me back in to FL Studio. Fruity Slicer is amazing. Just upload a break and chop it up to hell. You can do alot of pitch bending and chopped rolls. Its amazing. I'm working on a track right now. It'll be my first using FL Studio. I'll be sure to give you a heads up once its done if you're interesting. It'll be ambient dnb!
Well, it all depends on what gives you the best workflow. Try all the major ones, and use the one(s) that works best for you. I use a combo of Renoise and FL.

I don't think he does in his early stuff. There are slap pop bongo sounds and stuff like that, but all his early stuff is boss dr660 and akai sampler for beats. early shows he mostly played to a backing track, not that theres anything wrong with that...
i find that using fruity loops as a sequencer and using komplete 5 among millions of other vst's for effects and everything else gets you the best sounds you can get out of digital. if your rich go buy an assload of analog gear and hibernate in your room for years and youll be squarepusher!
