Thank you. I love this video and your attitude and how you explained things ! I'm vegan and I eat a lot of fruit but I just realized I dont eat enough flaxseeds (or omega3's) and i get bad migraines, which MAY be related to lack of omega3's so I'll eat more greens now !
thanks lisacole! can't remember my original source, but on further research, water is "pulled" from inside the cell to the outside of the cell through the chemical potential gradient when crystals form in the water outside the cell (inside the cell stays liquid because the sugars, enzymes, etc. acts like "anti-freeze"). With thawing, water moves back into cell causing expansion induced lysis. BUT cell walls rich in omega 3 have more RESILIENCY and fluidity so they can handle it! SO COOL!

cells walls burst when frozen because water expands when it freezes ... not because "ice crystals are sharp" ...
