  • Who makes hummus with canned chickpeas? It's an abomination. A little more trouble to soak dried garbanzos cook and make your recipe accordingly yields a much better result.

  • @lovenow an abomination? I love it when I have the time to soak and prep the beans and try to when ever I can.

  • @floraskitchen Have time? You soak the garbanzos in water over night. Let's see, bag to bowl add water: 24 seconds. Following day, put on cooker for 90 minutes. Do something else while they cook. Let's see: bowl to pot to cooker: 41 seconds. Gee that was really difficult !!

  • It was interesting because I made hummus today and when I went to get the lemons, they were accidentally frozen. Now, isn't the freezing process kill all the good vitamins like vitamin C?

  • @dreamerbabe1213 It's a spice called Cumin. You can find it in any grocery store and it adds a great flavor to hummus. It's one of the main ingredients in Curry powder and used in many Mediterranean, Mexican and Asian dishes.

  • I think I've watched about 5 different YouTube videos on making hummus and when I was watching yours, I forgot I was watching YouTube and had to remind myself that I wasn't watching a spot on The Today Show or a clip from a cooking network. You're excellent! I really like hummus but, I don't like sesame seed or Tahini. Can the Tahini be substituted with something else?

  • @RecipeCook followed your recipe last sunday, with twist of putting in fresh ground red chillies , to make it more suited for the sub-continent pallet. The other thing was i also added Olive oil while it was in the food processor.

    Turned out absolutely delicious everyone loved the texture and the bite of red chillies. Thanks for this great recipe.

  • What you could do is mince your fresh garlic and put into a jar w olive oil and store it in the fridge. Always ready for salad dressings, hummus or whatever you need.

  • I have made this with dried chickpeas and, you're right, that's the best way to make them but for those who can't/don't want to go to the trouble, rather than not making it at all, I say go for the canned.

  • you DON'T wanna start with a can of chickpeas. You wanna start with uncooked bulgarian chickpeas and cook them from scratch.

  • @deedevinebrake Hey veggie man, meat isn't all that bad, you just have to eat it in small amounts, and maybe once a week, for it to be good and useful. Back in the old times,when meat wasn't mass produced, almost everyone was a vegetarian, even in times of war, we knew how to eat without slaughtering animals. They ate old animals, or the ones with broken legs which could not heal. At least that's how it was like in Serbia 80-90 years ago.

  • @guiding5 I'm fully with you on the olive oil part... people please do choose GOOD olive oil when you are using it as an ingredient as it makes a BIG difference. There are many different varieties of olives (which is a fruit) and each variety produces an oil with a distinct taste too.

  • Well done, but if you want more flavor I suggest 4-5 cloves of garlic and a tablespoon of cumin. Season it with Paprika for some extra zing. If you want it spicy, chop of a jalapeno pepper and toss that in!

  • never been able to get a smooth blend with either my little food processor no matter how long i run it or with a mortar & pestle either. i thought the taste of canned garbanzos is nasty too. soaked & boiled dry beans have a much more buttery taste. maybe i bought a bad brand of garbanzos.

    i probably need a better food processor. i can get the flavor of corner store hummus, but just can't it smooth & chunk free. i was hoping to find some secret technique to get that pudding smooth texture.

  • actually moroccan hummus where the chickpeas are steamed fresh and the olive oil used is very very dark tastes better!

  • you should never use minced garlic! Fresh garlic is cheap enough and minced garlic DOES taste different than the crap minced garlic in a jar!

  • @mtnluke You can mince garlic simply in a garlic press. All you need are around 3 cloves, crush it with the garlic press and put it into the humous before processing. Tastes delicious and not like the crap you get in supermarkets/

  • Yes on the Tahini. It really does impart a certain special flavor to the hummus. I would not use as much olive oil as she does. At least not add more to the top.

  • My cousins are first generation Arab immigrants from Ramallah and they tell me that Hummus has Lemon and Tahini in it...and they make Hummus all the time.

    But I guess any "dip"/snack/cultural food such as this will have many deviations over the centuries, this is a really old dish.

  • Because in the mediterranean food are many sour dressings to combinate with meal or even with humuss the thina is prepared with lemon, or the labne is sour but the humus is to taste a creamed and soft taste of garbanzos not to aded to food sour (personal opinon) but I respect all kind of taste every one likes
