Just a couple of tips, even though the FDA says to pull it at 185, most chefs recommend 155 in the breast and then let it rest for a good half hour. When cutting that breast apart from the bird always cut across the tissue, not with it. You could be an announcer with your voice. Merry Christmas!
Yay, someone else who doesn't wait until Thanksgiving to cook a turkey! Come summertime I like to do one on the rotisserie with an orange glaze that's good, but nothing really beats the house smelling like turkey roasting in the oven on a cool damp day. Except maybe pumpkin pie. :-)
"Its not a rag, its a towel, a rag is something a woman uses once a month. A towel is what you use in my kitchen"! That is what my first boss told me oh so many years ago and it sticks today! Sorry, its a pet peeve of mine.

Recipe looks nice --- I use the drippings from the pan to make a gravy with the simmered stock from the neck, heart, and giblets.

That's the best time to eat! Just give the brain time to catch up with the tummy after the first few bites.
All the best to you.

Gosh Darn it! I should know better! I had a boss tell me that too (back in 1978). I accept your rebuke. My apologies extended!

No apologies needed! I first heard it just a few years after you in 84.
