Don't forget to scoop the cheeks out of the head...if you've never tried fish head cheeks, you're missing the "goodest eats" of the whole fish. Any fish, especially salmon cheeks.

u no i love alton but he really uses alot of salt in alot of foods i no its a flovor inhancer but it bad 4 the heart kidenys and bladder i love alton but really i think he could cut down on the salt
When you cook your own food with as much salt as he uses you are not using nearly as much as there is in processed food. And unless you have certain predispositions you will have no health problems due to salt.
Well, probably his staff forgot to cut the tail of the fish that they cooked--he has people who do anything that takes longer than 30 seconds to a minute for him.
I liked that fish that kepted staring at him :) I hope he didn't turn into diner.

My good reliable source for fresh fish is just 10 minutes away. A lake with a ton of good sized bluegill. Man I love Minnesota.

Try coating the fins and tails in a light brown sugar and soy sauce mix, deep fry them for about 1 min on high.
Makes very good crackers.

The salt doesn't absorb into it as much as you may think. It's probably a lot less in there than your average frozen dinner.
