  • @Hizoshi The salt is almost entirely a cooking medium. It does not infiltrate the fish.

  • Still though. That is a lot of salt. Not that its bad. It just seem wasteful.

  • believe me, it's necessary. The purpose of the salt is to encrust the whole fish, cook it evenly and not let it dry out. Really, the salt acts as a shelter for the fish as it cooks, not to mention a seasoning to boot.

  • Don't forget to scoop the cheeks out of the head...if you've never tried fish head cheeks, you're missing the "goodest eats" of the whole fish. Any fish, especially salmon cheeks.

  • every fish head has cheeks...just below and back from the eyes, but before the gills. After the fish, like salmon or halibut or cod, is cooked, simply peel back the skin on that area and you'll find the moist, choice cheek meat. It'll be a soft, round chuck of good eats. Enjoy

  • Try coating the fins and tails in a light brown sugar and soy sauce mix, deep fry them for about 1 min on high.

    Makes very good crackers.

  • The salt doesn't absorb into it as much as you may think. It's probably a lot less in there than your average frozen dinner.

  • When you cook your own food with as much salt as he uses you are not using nearly as much as there is in processed food. And unless you have certain predispositions you will have no health problems due to salt.
