@DreDre2411 - Thanks for your interesting comment. I would shy away from using the regular banana as they are alot softer than plantain. Plantain being quite a dense starchy banana, is a cooking banana and can therefore withstand the heat of cooking without ending up a sloppy mess. Smashed banana is great in banana fritters. Try making a brandy syrup, drizzle over it and top with a thick greek yoghurt. Good luck.

Igbos has the best and releast method of cooking their foods, chi chi.. inesi gwogwo.. Yall should migrate to Igboland in the south eastern part of Nigeria to withness what Chi chi is coooking, alot of different natural foods awaits all migrants out... Igbo kwenu!

Plantain is such a versatile fruit.. Possibilities for creating different dishes are only limited by the cook and his/her knowledge and cooking abiliites.
I totally agree. I feel that plantain is such an under rated fruit here in the west, and not really much to do with it's limited availability. Continental Africans and Afro Caribbeans tend to play safe and familiar with it. Do you have any interesting plantain recipes.
I've never had African food. :( I wanna try.
