  • you get no lumps when you add cold liquid to a roux? i get lumps anyway xP so i mix constantly while having a ssmmaaalll steady stream pouring into the roux

  • i kinda dont think that cooking that heavy cream for all that time while the meat loaf cooks is a good idea. making meat loaf and gravy separately would be just perfect, no excess fat scimming etc. gravys are not supposed to be cooked for a long time. otherwise, great video and thanks a lot chef john for all your effort!

They seemed very picky about gravy with any meal, some pointing out repeatly that in Germna cuisine, the gravy is more important than the meat. Even if the meart loaf were utter crap, I think that crew would love this.

  • Good day Chef JOhn. I made this meal last night which was a hit. I used beef/pork meat to make my meatloaf that my grandmother and daughter ate. I had to make a mini beef meatloaf for my mom. I bought a different type of mushroom, which I cooked in butter, then I used cream of mushroom soup and half-n-half to the mushrooms. Added fresh ground pepper and seasoning salt to taste. I paired the meatloaf with new potatoes and french green beans. Dare I say ENJOYED!!!

  • I do something similar to this in my slow cooker, only with an onion cream gravy instead b/c my guy can't have mushrooms. Very tastey =)

  • To avoid dipping FAT at the end, use a leaner grind of meat. Maybe at least above 90% lean. I use a 97% lean, 97/3 hardly any fat.

  • @Hipster2U he used some beef pork mixture, so the fat probably came from that. If you want some mixed meatloaf you will have to skim the fat at the end.

  • I eat a 90% vegetarian diet, with the last 10% being fish, but this makes me want to kill a few animals for tasty meat goodness.

  • Chef John! So happy to see shitake in your recipe here. I love shitake! a suggestion...the stalk of the shitake maybe a little tough compared to the top but it's not tough to the extent of being inedible, rather on the contrary! and I definitely believe, the stalks have the most flavor! perhaps chop the stalks up really finely and add to the mince meat or to the sauce. the meatloaf here looks delicious of course :) i wish i had an oven....sigh!

  • I love watching chef john's videos even though im only 14 haha, they get right to the point and unlike other cooking recipes, he doesn't really have those entire person shots, and just focuses on video taping the food, which i think is really good and entertaining. The videos are short and get right to the point. Which is the best part about them!!

If you don't like how he doesn't like his own creation, don't comment or just, don't watch it. You're making a fool out of yourself.

  • @Aisyah75 I agree with you, there's always trials and errors in cooking anyway, and Chef John is showing to us there is this kind of situation when we thought our food would come out great, but actually needs modification and improvements to make the dish superb. He even gave suggestions on how to make the recipe tasted better.That's how natural cooks should be, there's imperfection in food we make but we still try to improvise that dish. Instead of complaining, why not be more positive right?

  • ooh... 155 degrees isn't very well done for ground meats. I don't trust my meat sellers, I guess - I always cook my ground meats to 165 or 170.

  • Great start for the recipe. I wouldn't put all the sauce in the with the meatloaf so it doesn't get all that fat in it. I think you did the right thing putting the sauce on top of the loaf first. It looked fantastic out of the oven.

    I've always been intimidated by videos where cooks always do things right and never make mistakes. It makes me feel like I have to follow everything to the letter. Seeing this video just shows that anything goes and next time it'll be better!

  • I dont understand why pouring cold into hot rue won't form clumps. wouldn't it be the opposite? because hot and hot will allow it to dissolve and mix? but cold will cool down the rue which makes it harder to dissolve thus forming lumps. can someone explain?

  • @PCUlzzang Pouring hot liquid into the wet flour will cook the outside, trapping the raw flour in the middle .... this would be lump.

  • I would brown the meatloaf separately first, so some of the fat renders out. Then, I'd put in with the mushroom sauce and spoon it over to my heart's content with my own hairy knuckles!
