He uses so called "hammer ons", when you hit the string with your finger hard enough to make a note without having to pull the string with the other hand. Then he uses "pull offs" where you release the string while pulling it slightly up or down to also make a note without pulling it with the other hand. I want to say that its easyer then it seems but to someone who has never played the guitar it probably isnt :P

It is not an unorthodox technique at all! Many people use this technique to make a far greater sound. Just listen to all the ill placed notes! I am not a guitar player myself but i have many arangments for keyboards of Pachabells Canon.
