I also use touch for families with pups and kids. Even young kids can be very successful "teaching" touch and it helps children use their hands in a positive fashion, not flapping them about, and can help the relationship with the dog or puppy.
It is also good to help canines LOVE having hands come at them, making them less likely to snap at a well meaning stranger who approaches and just reaches for your dogs.
Touch is the beginning step for a lot of agility, therapy and assistance behaviors. It's called targeting, and it introduces the concepts of "which" and "where" to the dog -- this is a building block used later to teach a dog to retrieve items by name, push or pull open doors, and so on.
Touch is a fabulous, and highly underrated way to get your dogs attention and focus. I often teach Touch as an alternative for Come, because it gives dogs a bullseye to run to as opposed to plain old Come, where dogs slow down when they get closer because they don't know what happens next. I also use Touch with anxious or reactive dogs because it is easy to to in a stressful situation but puts their eyeballs on me instead of the trigger or scary thing. Those are just a few examples.
