hmm my version is way diffrent i chop the legs and split them on the soft side ...make a mixture of garlic,salt,chili,lemon juice in the mortar ....spoon it over the open side ..and a little lump of salt butter and a smal lump of blue castello and bake them in the oven ...served with toasted bread and a good salade ...a wine thats perfect to it is casabianca:)
