how do you begin to train a rat to do this? I mean, I get after the rat has done it a few times and sees that he gets a treat, but how do you get him to do the circuit the first time to get to the discovery of the treat?
It's actually quite simple. By releasing food each time the animal does the circuit, they condition what actions bring reward. By removing humans from the contact, they remove the possibility of the animal associating the humans mere presence with food, and allow the animal to avoid the stress of changing handlers or conditions. Rather than trying to please a human, the animal simply does its routine.
Dude! A trained rat is a very happy rat. It stimulates their mind. All rat-lovers know how important stimulation is for rats. Tehy are very inteligent. This is no different to sending an 8 year old to football practise.
While I agree with you I still wonder if the rat gets food when not doing this routine. My rats would never do this, but I guess they're spoilt rotten.

Its hard to tell, and its likely that that method was used in order to test to see which method of training works best.
That being said, food withdrawral is not the worst thing- so long as it is not over a period of more than one or two hours (for a rat).
That being said- rats have this way of penetrating your soul with their eyes, they must be jedi's...
