I prefer it when they start with a slow number, then about halfway through they suddenly start playing a faster number and somebody alsways shouts HEEEUUGGHHH!!! at this moment- which, I presume, is an old "Celtique" tradition. What is the purpose of this please?

No. one side is the lines on the stave and the other is the spaces.
