  • The fingers across the coffee at the beginning before the tamp, is a no-no, that is a food surface. I wouldn't touch the inside of the customers cup or let the coffee brew over my finger - really shouldn't touch the grounds or portafilter surface especially in front of a cutomer. excess can be removed with lid of grinder - or if need be a clean cloth. Otherwise nicely shot and poured. I think they are decent machines, steam wand valves can be difficult to get adjusted right.

  • I notice the right group was still dripping as he lock the handles in.

    All Nuova Simonelli machines drips a lot when you flush the shower screen, you must wait until dripping stops before you lock the handles in.

    Also, start the coffee extraction as soon as the group handles are locked in, not moving the cups first. The Aurelia is known for it's pre-infusion technology, this allows time for the barista to move the cups into position.

  • @mobytho The dripping is actually part of the pre infusion, its weird, but thats what the simonelli rep for the cafe i work for told me.
