@ghfdfhfdndxhcg: Cause he had a serious shock after escaping from dracula's castle. The change of hair-colour is not mentioned in the book, though. At least as far as I can remember.
Ps: I wonder why Coppola didn't re-shoot this scene. Oldman was perfect, but the others were just ridiculous.
Unfortunately, this film was waaaay below budget for what Coppola really wanted to do. As good as it is (due to Gary Oldman's and Anthony Hopkin's brilliant portrayals) it could have been 2 or 3 times better! Perhaps this is also the reason why the film is so "artsie". We will never know what could have been. GREAT horror film, nevertheless.
The film follows Keanu's character because it is modeled after Bram Stoker's book, written from the perspective of Jonathan Harker. Keanu wasn't god-awful, but I wish they had cast someone else in his place. Gary Oldman is truly amazing in this film, and in most films for that matter. Keanu pales in comparison. One of my favorite films. The makeup is fantastic.
The book was written from multiple perspectives. It was written as a compilation of the diaries, journals, recordings, logs, etc. from the main characters. FOr example, it jumps from Jonathan Harker's journal to Mina Harker's diary and then to Dr. Seward's recordings.
This film would have been a lot better with more of this sort of gothic horror within it. This was an excellent costume and make-up job but it was on film for hardly a moment's time. Waaaaaayyyyy too much Keannu Reeves in this film and not nearly enough of Dracula.
@MrSchultzstaffel I agree. I thought the film since its title of the film is Bram Stoker's Dracula,The film should have revolved more around Gary Oldman and not so much Keanu Reeves. I mean Keanu Reeves did not have the lead roll after all right?
@MrSchultzstaffel I thought althought I consider it an A+ movie, I agree. I mean if it centered around at least SOME of the paranormal aspects of dracula (like the turning to fog at will if enemies arise, etc.) then it would've been more like A++++ to me. Just saying....... Wouldn't you agree MrSchultzstaffel ?
Gary oldman is one of the BEST actors I've seen... and he's never been awarded... that sucks!!! a madman, almost as creepy as Hopkins himself...

@Soilwar It probably has something to do with how he's not actually a very good director.
