Well, converting infrared to visible light is false colour to begin with. So "making it greyscale" doesn't mean anything more, really, than just using the infrared cam.
Probably they invert the image but also use color replacement. So if you make the hairs red you can turn only the red's to black which gives this strange image.
It's more than image inverting. Watch her face: dark lips, dark eyelashes, dark hair. It's like a flourescent make-up, like the fluids in the clip. I don't know how they do this, but it's very cool.

I would say, is heavy makeup and then composite to invert colors.
