I would've pulled this shot at 0:12 on the video. The lighter the color of the espresso, the less body and richness. This looks like it probably tastes sour.

Not perfect huh... look, it turned blonde really quick. A perfect pull should be 17 seconds until blonde, this just took 3 secs to be creamy blonde. Try putting more coffe or grinding it more fine.
Too fast, and brewed too low.Honestly guys i dont' think the majority of it was underextracted, a shot at too low of a temperature makes an extraction with no tigerstriping and blond color.
I counted 19 seconds on your shot, and it appears to be pouring in an incorrect manner for most of the time. It looks like the entire shot is over-extracted from the color of your espresso. I just think it's a bit ambitious to advertise the perfect shot in a public forum such as YouTube when you clearly don't know what perfection is in espresso.

how could the extraction time of the single and double shot is the same? the amount of ground coffee and espresso is different between the single an double. can you explain me about that?
Take a look at the holes drilled for the single and compare them to the double. The double's are not only larger, but they are just the right precise dimensions to match the results you will get from pulling a single in the same amount of time. The double shot also takes on twice as much water but also has two distribution points to pour from.
Starbucks? you means Macdonalds?.... no thanks. Lighthouse Roasters, SEATTLE WA, simply the best. #2 Stumptown Roasters Portland OR. Or in a pintch, go with Cafe Ladro or Kalanie. All great choices. Life is too short foe bad coffee.

so for standard perfection...
Start counting as soon as you hit the button. Stop it between 20-23 seconds.
The shot should start running between 3-5 seconds.
If not, you'll be bitter or watery - so try try again!
