@GoldenKevin it's to do with the red candlelight not providing a full spectrum of color. That's why rainbow dashs normal blue and pinkies eyes look grey in the low light levels. High Quality Animation right there.

I think she just wanted to catch them by surprise with a joke because they thought she was asleep. It is a bit weird given she doesn't joke much, which is probably what made this a popular pony meme, because it confused people. Even though she likes nature, I'm sure she likes being a pony and hanging out with her friends more.
