What does Maki mean? One of my favorite sushi rolls is called a sumo maki which is just shrimp tempura jalapino cream cheese and maybe something else all in rice and deep fried in tempura flakes... So what would be the "maki" part?

Maki means several things. It can mean: roll, rolled, spiral, whirl, or wrapped.

Natto is actually so good for your health that I envy the people who can eat it. I roll the natto in nori and then fry it. My husband loves it like that too. Did you try?

You can wash the slime off with hot water in a strainer. Chill the beans to stave off the smell. If you keep them below 70 degrees Fahrenheit they won't stink as much. I like the taste but can't stomach the slime. It makes my gag reflex go off.

If you can stand the slime, only stir it 15 times, no more no less. I'm not 100% sure why that is, but it was on Iron Chef so I assume there's a good reason.

So most people comment on the smell and texture... But what would you say the overall tast would be like? I imagine it would tast like baked beans... I guess because thats what it looks like... What say you?

It has its own taste. Baked beans and nattou have only being beans in common. Nattou is good though. It's also a cheap source of protein and vitamins. There's a trick to eating it that I found. Chill it. Then serve with room-temp rice, shoyu, and hot sauce or thai peppers.

Why wait? You can get Nattou at the nearest Asian import store. I get mine from a Korean Market. It's in the frozen foods section. (They always look at me funny and are convinced that I'm half Asian and just refuse to admit it. This is not the case, I'm mixed European and Native American. It doesn't help when I buy Koshihikari rice in bulk or bulk jars of nori and umeboshi. LOL)

Hey Victor.. did that take some serious zen-like training to eventually shelf that, or were you always able to eat it? I've travelled many places eating various food but none surpass the texture, smell and overall rancid taste of Nato. I've tried to eat it many times but it just doesn't sit with me!

I have to object here, soybeans are not nutrituinist, actually they are poisnous and have to be processed by fermantation to cause a degration of the poisinous substances.

Even though soybeans are edible in their fermented state, they are still slightly poisinous and are never eaten in any big quantities in asia.

Here in the US I can get Natto in Asian markets.. but I hear once it's been frozen the quality really goes down.

I plan on trying some when I get to Japan someday.

I also don't hate natto...I'm not a huge fan of it either. Maybe fresh will be better than frozen.

@MrJingJong yes well it's the regular nattou mix (nattou + little packets of spicy mustard and soy sauce) + mayo on a toast. Super yummy! Manastar made a video of Daichen eating it a while ago.
