  • Black-eyed peas should be cooked. In this video I am using can peas they are already cooked.

  • It's easy - just grate some ginger until you have a few tablespoons of it in a bowl. Then you squeeze out the juice with your hand.

  • Shred the ginger using fine shredder and squeeze the juice, it is very easy.

    This is a really good recipe. Using yellow and/or orange bell peppers is a great variation on the main recipe. Those have a slightly different flavor, but it works well with the other ingredients too. Or a mixture of the various colors in the same quantity.
