  • Separate the men from the mice, although you us sugar, I use honey with my cider to increase the gravity. Brilliant video, people are over sensitive about infections. But alcohol is the best sterilization method.

  • I have a question, dont know if im doing something wrong but every time i have tried making this i always seem to get a strong taste of yeast when i driink it, even after syphoning out into a new container. aslo if i leave it for a few days I end up with the sediment at the bottom of the container. Any suggestions?

  • Hello, loving the vids, have already done this recipe and made 5lts (already gone), I have another 10lts going now which I intend to leave a little longer this time round. Is there a limit on how long the cider will keep or can i leaver it for say 6 months without worry. Cheers.

    Except I didn't add sugar nor yeast food. My gallon has been bubbling slowly but steady (a medium sized bubble every 15 seconds or so) and has been like this for almost 2 weeks, do you think it has stopped already or when can I be sure all the apple sugar has been fermented already?

    I have a hydrometer but as a newbie I didn't measure the juice before starting the fermentation process so I dont have a starting reference point.. should I add more yeast or raisins? or just wait? Thanks

    I need your experience here, I wanted to make cider out of preservative free apple juice, I added 10grams (a whole packet) of Danstar Ale Windsor brewing yeast (it said it was good enough for fermenting 23 liters of beer) to 2 gallons of juice, followed all of ur instructions

  • I need someone experienced in brewing to answer this, so I came to you craig. My question is as follows: I'm doing a test to check if the applejuice I'm using contains preservatives by adding yeast to a bottle of it. So far (about 3 days in) it has gone cloudy and formed a froth a couple of centimetres high ontop. It bubbles regularly though not too much. I only used bread yeast as this was a test. From what I've said does it sound like it's working, and does it contain any preservatives? Thanks

  • @CraigTube I checked the ingredients and it contains no preservatives, or mentioned ones at least. I was just suspicious as it's hard to tell if companies are listing all of the ingredients in their products these days. Anyway, thanks for the swift reply, it's comforting to hear that it's going okay.

    Also, to make a yeast starter do I just have to add some sugar to warm (below 20 degress celsius) water and leave it? Thanks again.

  • I happened to come across your vids while searching for wine recipes and I like the simplicity of these types of drinks. I had some apple juice and yeast lying around the kitchen so I decided to try this. My question is why wont the quick rise yeast work? I just noticed the tag you have on the video that says it wont work. I used it and it seems to be working. (16 hours) the balloon is inflated and it's fizzin like crazy in there. Will fermentation stop too early or something.

  • @craigtube I did not have an airlock so I untwisted the cap a little as suggested, however it keeps overflowing from the built up carbon dioxide. Any suggestions? Also, what steps should I take after the brew is done to keep the hard cider from going bad after a couple of days?

  • As soon as you put the sugar into the apple juice, you measured the specific gravity with your hydrometer. You said you had an alcohol level that was about the the equivalent of a beer. I'm unsure of how you had alcohol without any fermentation. What did I miss? And how are you sanitizing your equipment?

    The hyrdometer measures the predicted alcohol content after fermentation I believe. To sanitize you could use bleach, but it is much more effective to spend bit of money on some sterilisation tablets.

  • Okay, I think I fermented "ALL" the sweet taste out of my first batch of hard apple cider because it just doesn't have much taste and there is no sweetenss at all. So, I added some suger to a small glass and mixed it. Okay, now it taste a lot better. I am guessing I should have stopped the fermentation before all the sweetness was gone from the cider. I will rack it off the yeast and some sugar to taste and chill it for later. It does have some achohol since I got a good buze from it ! Cheers!

  • My hard cider fermented for a week. It doesn't have much taste at all. The original apple juice tasted great. I am woundering how much taste it is supposed to have. Maybe the cinnimon that others add is where the taste comes from or maybe it is to be mixed with other apple cider or etc...

  • @BobMcCob I have purchased fresh cider at apple orchards many times but all of our local apple orchards have closed. I put my tasteless hard cider in a corny keg and added two gallons more of fresh apple cider to it plus a dozzen cinnimon sticks. It taste assume now but I know I have cut the alchol content. Thats okay! As always I will keep trying until I get something with taste without the suplimental none fermented cider addition!

  • Hi Craig, Great video`s! I`am new to kit brewing and after watching your inmate brew video I got started on some. I have two 5ltr, 1 apple, 1 grape, and used dried sultanas as a nutrient. All seems well except the next day I noticed the packet of sultanas contain added preservatives! ie Sulphur Dioxide! oh and some vegetable oil.

    Q. Is this very bad?, will it still work?, could it be harmful?

    Any advice is very welcome, and many thanks in advance!

  • Hey Craig, i tried this out about a month ago or so with reg bakers yeast and fermentaion stopped after about 48 hrs in so i forze it to kind of "applejack/freeze distill" it and got it to come out to about maybe 7% which wasnt bad. Anyways i finally went got some "Lalvin" wine yeast and was wondering if yeast nutrient is still needed, and also how much wine yeast would be needed for about a 3 lilter batch of apple juice? Thanks!

  • @kickthetv643 There just can't be any preservatives in the juice. Frozen is usually fine and doesn't have any.

  • @CraigTube Hey.. Thank you.. In a nut shell.. one gall of juice 2 cups of sugar.. I used two little packs of baking yeast.... Shake a lot for a bit.. one hour on and off.. Then.. put a toy ballon on the top... Let it sit for one week.. Hey... not to bad!! One gallion for about 3 dollars.. The way I did it smeled very yeasty.. But not bad to drink. Any way Thank you craig... Ya.. ANYONE can do it! Baby steps for now.. Then Make a great drink..

  • you really should do more videos playing with inmate brew and hard cider its kind of my new hobby, It cost maybe 4-10 usd a batch, and you get a gallon of brew.

    I went to my local HBS and now am the proud owner of a boatload of gallon jugs stoppers and airlocks, 6 different kinds of yeast, oak chips, racking cane, and bottles.. well i bottle in masn jars.. gotta keep it country

It looks like a top with like a mini bottle on. Not sure could you tell me? Ive seen that the raisins you where using where the SansNom brand , im from Canada too( Quebec) and I was wondering could you tell me where do u find your airlock or how to make a cheap one, same goes for your yeast nutriments(the name of the store) Thanks

  • @Octoganapus If you don't have an airlock, just screw the cap on until it stops, and then back it off a hair. Just don't move or disturb it while it's fermenting and no air will get in. You should be able to use any rasins, or boil some yeast and use that as a nutrient.

  • @Octoganapus Im also just starting but I made a working airlock from 2 plastic bottle bottoms, few inches of plastic tubeing and some tape. Guess I could post some instructions if some of you guys are intrested. So give me some replies and I might make some time to make the instructions.

  • Quick question, if you have time! I'm on my first batch of hard cider and everything seems to have gone well... but my airlock is still releasing a bubble per second and I'm on my 4th day of fermentation - should I be concerned? Most people seem to say that the primary fermentation should have slowed almost completly by now, am I wrong? Thanks for any help and for your time.   • hey craig. really like the video. dont worry I am not 16 Lol. im 22 and live in Scotland. was just wondering, i know that buying apple juice is easier than pressing my own apples but i prefer the taste of pressing my own :) that in mind. could i use your method on a larger scale with pressed apples and ordinary cider yeast ? maby around 5 gallons.   • @darnadams Ok, but it's not illegal for you to make it, or to learn how to. It's illegal for you to drink it, and to protect myself I have to express my non support for under age drinking. It's also not illegal for me to show how to make it. If a 16 year old decides to make this and drink it, there is a problem with parent supervision and upbringing. Kids can obtain alcohol in many ways. I'm glad you have decided not to do this, and I hope other teens will be responsible too.

  • @CraigTube Correction it isn't illegal to homebrew if your underage' if you have parental consent' and your parents sign a document stating that they will only let there child drink the finished product if they say so =)

  • @MyNameAintEarl270 yes but it would most likely stop after about 2 or 3 weeks just keep checking to see if its still fermenting because that means its getting stronger

  • at that hydrometer reading, you should rename your video Viagra Hard Apple CIder, as its more wine than an ale. I'd also recommend using the entire yeast package, or a primer as high alcohol content actually inhibits yeast above 9%, unless champagne yeast is used. Primers get a sufficient number of yeast cells active for complete fermentation.

    and by the way i did'nt have air-lock and another equipments because im in iran and in this country all of these are illegal ... and i coudn't provide them...

  • @gocubs033 I used champagne yeast and the cider was very dry. I had to sweeten it. I haven't tried wine yeast, but I assume it would work much better any other yeast since it's made for this sort of thing.

  • If you do this again, try EdWort's recipie. It's very good and easy. i have 10 gallons queued up in the fermenters with this stuff.

  • I have done my 1st brew using store bought juice, i am about to rack it, it fermented out in 4 days so at the moment its just sitting, tomorrow i will swap the containers over and taste test and do an FG on it. I have started a brewing channel to get it away form my other stuff the channel is named BrewOclock i only have one video at the moment on the preparation of this brew. I have just been out into the country and got my self some fresh apples and pears from an orchard am going to juice them

  • @my04tone Reply to myself here after swapping i.d's I went out and got 3.5kg of Beurre Bosc juicing Pears $2.00 (about 7lbs)5.5kg Pink Lady Juicing Apples $2.50 (about 11lbs) and a bottle of of Cheeky Rascal Strawberry and Apple cider to try because because next time i am going to pick up some cheap Strawberries and do a brew with them. All picked fresh from farm trees for little cost and a day out in the country thrown in. Will begin this brew after i rack the store bought reconstituted juice

  • An interesting brew! i have been brewing my own beer since the early 90's have stopped for a few yrs and now back into it. I bought the makings for an apple cider today, i want to try a supermarket juice 1st, i am sure its not going to be like the expensive ciders i love but it will be interesting journey as i develope my brews. First up a 5 lire jug with 4.5 litres of store bought Apple juice and a Vitners SN9 yeast and away we go. I do have access to pure fresh juice but i want to start

  • Hi Craig; your video inspired me about 6 months ago; made a batch using my 19L carboy and about 16 L of apple juice and about 6-7 cups of dextrose/corn sugar; used the same instructions as beer; bottled in early May (used 1 c dextrose for priming); pretty good; it's very dry so I add about 1/4 c of apple juice to the glass before I poor in the chilled cider and then it's perfect: just sweet enough and very thirst quenching. Thanks for introducing me to it!!

  • @Litawyn Not all apple juice in this world is as crappy as you describe, that's just ignorant. Sure, making cider from freshly picked ecological apples is best. But that's not always a viable option due to different factors. So why not make a drink like this if you feel like it? I very much doubt it will taste like "piss".

    It's not a question of simply using fresh apples, it's a question of what kind you're using and whether you're using them at their peak. If you want to make some kind of alco-swill out of canned apple juice and bakers yeast, have at it. But don't expect it to taste anything like decent cider made the proper way. It's analagous to comparing a decent bottle of Barolo with a bottle of Boone's Farm.

    Of course different apples have different characteristics, I don't know where you wanna go with your arguments here.

    Noone said doing cider like described in the video is the best way to make cider. But you can make an acceptable drink using juice, especially if you use good juice. I wouldn't use bakers yeast, but even using that you can get a drink tasting okay.

    How long does the fermentation take to complete for your cider and at what temperature?

    I live in the tropics in Australia and at the moment it's the middle of Winter, with temps ranging from 13C at night to about 25C during the day. I heard cider is fermented slowly at very low temps. I'm guessing to ferment at 5C in a fridge, a special cider yeast is needed, right?

  • @SuperAngryHippo Mine takes about a week at around 80C. Maybe a bit longer at 70C. I don't use an airlock, just a loose fitting lid and I put my ear to the side of the jug and listen for the fizzing to stop.

  • Hey man , I tried this in a 1.5 liter bottle with 1 liter batch .I used baker yeast , which i heated up with some water and sugar.Since i don't have the airlock, I used a balloon like you suggested in your other cider video.So fa everything's great and the balloon started filling with gas.I suppose this will be without any carbonation.Is there any easy way to carbonate it after the process is done?

    get another 1.5 liter bottle, sterilise it. when it has finished fermenting, pour the cider in the new bottle, leaving the yeast sediment in the first bottle. add A BIT OF fresh apple juice to the new bottle and close it with normal lid. the apple juice gives the yeast in the liquid some more sugar. by closing it up with the normal lid instead of a balloon, the gas is forced into the liquid and you have carbonation :) make sure the fermentation is 100% complete before transferring!

  • @esposrafy Bottle it with some sugar. Use about 1 tsp per 500ml bottle and cap it tightly for about two weeks, NOT IN THE FRIDGE.

  • @BlueViper494 It doesn't matter, they all work. I use sodium metabisulphite and Starsan. I just picked up some Iodiphor as well. Just use what you can get.

  • @WTFBlackMagic leave it for 1-2 weeks, or until the bubbles in the waterlock has stopped. the tricky part is to know wheather it has acctully stopped fermenting or not, but a good tip is to rack it (you connect a hose from the cider barrel to a new CLEAN one and pour it over through suction) to remov the sediment and then put it in screw cork bottles or my personal favourite soda-pop bottles (available at your local ikea cheap ) then leave them in the fridge.
