  • Hi bong! I usually POUND black crab(they make it too sweet now) or crab paste w/shrimp paste & fish sauce, sugar, no salt, garlic, peppers, lemon juice, cherry tomatoes.   • I've never seen anyone add salt in it too since you already put in fish sauce and that home made sauce. Wouldn't that be too salty? That dried shrimp is already salty too.

  • That depends on how much salt you put. Just like desserts, who would had thought of putting in salt? Every food needs a pinch of it in order to bring all the tastes together no matter how salty the food is. At the end, it depends on your estimation on how much to put each ingredient to make the overall result complete.

  • I guess your used to eating really salty foods. But anyways, I'm just not used to seeing people put salt in papaya salad. My mom used to sell papaya salad with the outside vendors in Laos and Thailand and just never seen ANYONE put salt in it.

  • You must be used to eating a lot of salty foods too if you don't think they have a salty taste to it. If you pop one in your mouth, it has a salty taste to it. I didn't say they were ridiculously salty.

  • Hi there jaykuoch! The list of ingredients for this homemade sauce is in the parenthesis in the description box. When it comes to cooking, I'm not much of a measurer, but an estimator. Therefore, I would not be able to give you exact measurements. Just know that you simmer all those ingredients together and can refridgerate it.

  • Hi Dreamer4Life777! You are you lucky! I wish my backyard can grow papayas or any other fruits. Here in GA, we have clay dirt...so it doesn't grow crops that well.   • well, it's basically the same ingredients. I didn't see a few things that i would add to my salad but that's probably because you wouldn't prefer it in there. like, say fish sauce. plus i just add them in a different order. =) i haven't tried doing the sugar and salt first. i like crushing the garlic first but i use raw garlic. idk, thats how my mom made is so i've always stuck to that.

  • Oh I did used fish sauce...2 tbs were added right after the lime juice and I use raw garlic too, but in the video, you saw that the garlic was already chopped so that it's quicker to smush.

  • I love shrimp paste and yes, it makes a big difference. My shrimp paste is already simmered in my "homemade papaya sauce" along with crab paste, fermented fish, tamarind, palm sugar, garlic, chili peppers, fish sauce, salt, and sugar.

  • I made this with grilled chicken for lunch today and my papaya was not crisp. How do I make so that it's not soggy? Maybe I added to much sauce?

  • Cool! There's a special trick to make the papaya crispy...right after you shred it, soak it in ice water for at least an hour and drain it before pounding it. I never knew this trick until recently when my aunt learned it from a chef that sells papaya.
