Yes and no. A egg shell is air permeable, so the shell does not provide a vacuum. If you take "sous vide" literally, then you'd need a vacuum bag because the term means "under vacuum." That said, a vacuum bag is not technically necessary. It's used simply to:

No, unless you want your apt to kill you. Sous vide is done from 130F-170F, and no home thermostat goes that high. What you need is a thermocouple, not a thermostat.

The reason the temperature system is built like this as a separate entity to the pot is simply because it can potentially be much MUCH more accurate than an embedded system; which is a VERY important factor when cooking eggs in Sous Vide style. The eggs must be cooked EXACTLY between 144 and 158 for them to come out perfectly.

sous vide means under vacume and im pretty sure that if you can just stick the thermometer in the lid then there is no seal and no vacume also you can get food poisoning from sous vide because of lack of oxygen and so you need to keep fresh water circulating in it and that rig wont do that

very good concept.
but for this to become true sous vide you need 2 more things-
1. something to circulate your water in the slowcooker, so the temerature
will be uniform, and also for heat convection -
moving water will move heat into your food.
2. a vaccum pack for foods that are not eggs...
