Ahh the irony...Between cooking shrimp(back of Old Bay can)for the first time and getting a santoku ceramic knife for Christmas I have been on an amateur culinary journey recently. I bought all the ingredients for an omelet and it didn't work out(the flipping and even cooking), was still good though. Just watched Julia & Julia-mostly because the BCS Championship sucked-and it led me here. A very hot pan and shaking? Have all surplus ingredients and will try soon.

Meryl is good but there is always something cocky about her in most her movies but before mamma mia i seen post cards from the edge and was like ooh she would be good if they made a mamma mia movie WALAH LOL Back To Julia did she smoke as her breathing is a bit rough or is that just nervous as i think this was alive as her mistake was not edited out
Oh Julia, you beautiful beast. If I only knew making an omelette was as easy as shaking a pan around and dumping it on a plate with a cup of parsley on top.
@namekman01 It was invented in 1938 but didn't start getting manufactored as nonstick cookware until 1956 or so. It was first marketed in 1961. The French Chef started airing on TV in 1963 so I don't know how TheBrewChief thought that Teflon pans came out 8 years later.
I just realize now how perfectly Meryl Streep imitated Julia's voice and gestures..they dont call her one of the best actresses of all time for nothing.
@phil2u Not just friends, but also colleagues. They had a show together for quite awhile. It was hilarious near the end of the shows after they had hit the wine fairly hard, and were pretty drunk. Their humor got pretty out there at that point. It was also funny to see them bicker over how much of what to use as ingredients.
I'm watching the J&J movie right now. I had to look this lady up. She may have a funny voice, or may not be up to standards of todays chefs. But she made something of herself by doin somethin she loves. She had and still has a great following. I can't believe ppl hating on her so hard. Well Ms. Julia Child, you're a legend in my book. Peace & <3
Sorry Julia - you're great, but salt and pepper should never be added to eggs in the beginning, as they break down the egg too much and lose that great texture.
@zabadazidit In each case, depending upon how many eggs are being used, add salt and pepper when the eggs are quite nearly coagulated and more or less in the shape you want them. You can also add salt and pepper after their done - just let them stand for a moment before serving so that the eggs absorb the salt and pepper a bit. But definitely not in the batter before going into the pan.
Never realized how quickly omelettes should ideally be cooked. I'd always cook 5 or 6-egg omelettes over medium heat and clumsily flip them over to cook the other side before I'd try to fold them over whatever I wanted to fill them with. I just made two with three eggs each, the way Julia did here, and they turned out better than any other omelette I've ever tried to cook, albeit slightly overcooked still. I love this woman.
There's a place and a time for everything. Julia obviously wouldn't make it in today's slick and shallow world of show business. When she became successful, slick and shallow had not quite infested it yet, so that is why she was able to be successful, simply because she was a good cook and had a somewhat unorthodox way of presenting herself.
A large part of the rest of the world is also shallow. The percentage of negative comments on her physicalities attests of that.
Watching the movie helps if you don't appreciate Julia Child's unique and great personality :)
I saw 'Julie and Julia' and I just have to say that it's watching Julia Child as who she really is that you can say Meryl Streep did a really fantastic job of her in the movie.
The British stereotype of US tv presenters is that they're really slick, well-groomed and word-perfect. Obviously we never saw The French Chef. Julia Child is... compelling.
The most awesome part of this video is that she's using an electric stove...proving that the average person in their average kitchen can cook amazing food. Never been impressed with the wussy chefs who can only cook on gas stoves.
for everyone who thinks she is a moron or stupid or whatnot at least she had her own tv show and did what she liked the most and she even got a movie can't say the same to you people.
@Sindrassa Plus she wrote most of a 600 something page book, spoke another language, was part of WWII, and married a man 10 years older than her. I'm pretty sure most people can say that
@laurenxprice Because it shows that I stopped paying attention to her as soon as I realized what a moron she was, which was pretty much immediately. In fact, even discussing what a moron she is gives her more time than she deserves, so end of discussion.
@jensssen - It could be that your pan wasn't big enough. The "traditional" omelette pan is too small for a classic French omelette. I had to use a 10" pan and it worked perfectly. That, and make sure the flame is on the highest setting.
