i wonder why he didn't choose the chinese cuisine chef. is it common to challenge chefs who specialise in different cuisines other than the one the challenger intends to cook? it's pretty strange then, cause there wouldn't really be basis for comparison.

This is pretty common. Sometimes the challenger will challenge the Iron Chef that he considers the strongest, regardless of his specialty. Other times, personal grudges motivate the decision. Personally, I find cross-cuisine battles more interesting; it shows better the versatility of the theme ingredient.

It is all part of what makes this show so awesome.

They actually re-used the same clip after the first few episodes. The Iron Chefs were busy chefs on their own, they could not afford to stay in kitchen stadium nor dress up for TV. The Iron Chef was actually chosen by the challenger ahead of time. When I first heard about this, I was crushed! Hahaha.
