He's not pushing the chisel, just tapping it lightly with the mallet. Likely it's not going to go any further than an inch or so even if it slips. This guy can probably do this with his eyes closed.

To me, I'd rather these guys just be carving shells and putting the drums out for less money. Who cares whats on the outside, and it probably hurts the sound if anything at all.
