As for that video, I think you're right, I can't see any major smoothness issues running at 30fps, but it's hard to judge when everything is so dark >.>
I suggest recording your voice independently of Fraps. Audacity is an excellent tool for doing that. Just make sure to sync up the recordings by doing some sort of "mark" on both recordings.
If you do end up doing a Let's Play, it might be worth setting up a server and connecting to that (even if the server's running on the same computer) instead of just doing a single-player thingy (I like the word thingy). That'll make it easier for people to join you later if you want to do that.
Seems to run quite well after you got going. I believe switching to 60fps in fraps had some impact for me. I'd try using optifine and a shorter render distance if you get serious lag. But It seems to run quite well.
@iTat1000 I felt it ran acceptable, minus the few moments it chugged and froze on me for a brief moment. What kind of impact did recording at 60fps have? I didn't see much of a difference when I compared two recordings.

And I'm running at Normal at the moment I believe.

And I plan on running a server to host the LP, this was in single player just for testing purposes
