The usual favorites in Louisiana for po-boys are roast beef and gravy, fried shrimp, hot sausage, fried oyster, fried catfish, fried softshell crab, hamburger, cheeseburger, pork chop, ham and cheese, veal cutlet, etc. The bread is what makes it a po-boy, if you don't have traditional New Orleans French bread, then it's just a sub. You can order the bread online I believe. Leidenheimers is the bread of choice here in New Orleans, but reislings makes it, Binders makes it too.
This is a note to everyone that views any channel on how to make a po-boy, the only thing that makes a po-boy different from any sub sandwich is the bread. Po-boys usually have lettuce tomato and pickle, which is standard on all po-boys in Louisiana, but the New Orleans French bread, is what makes it a po-boy. The bread has a special texture not found anywhere else, not even in France. New Orleans French bread is different from French bread from France.
@saintveil Thanks for your note. We have a seafood gumbo video and recipe. Go to our website and search seafood gumbo in the search box up top of the site. Or, go to our site url with /seafood-gumbo added to it.

great video. i moved from slidell la to pittsburgh pa 2 years ago and i realy miss my catfish and oyster po boys. nd i miss my new orleans french bread most of all. french bread aint french bread if its not from new orleans.
hey, I am from Slidell, too. I live in Oxford, MS...these north Mississippians have no clue what a poboy should tastte like........one of my favorite places to go get a poboy was at Thonn's Seafood on Ponchartrain Dr.....of course, it is no longer there.
Never tried Catfish, to be fair, never even seen it for sale over here in the UK but whoa, that looks good. If I see it, gonna have to try this recipe out for myself.
