You are the 1st person I have ever come across who uses 1 POUND of garlic with only 1 Onion in Sofrito. LOLOL I enjoy cooking, and have taught not only family members but friends who love our PR dishes. Check out real Chefs, & PR recipe books and you will see that though they are many variations, NO one use so much garlic!!!! Its suppose to be a balance. By the way, that's why your blender breaksdown. Olive Oil is better than water and I would never use a spoon while the blender is on!

Thank you for the recipe, looks yummy! I would have liked it more if the person holding the camera was a bit more steady and not doing weird side angle shots. (It made me dizzy.)
Re : hate peeling garlic savor magazine 10 second shake it method : smash the garlic bulbs to break them apart, put all pieces in a bowl - place another bowl tops together on top - hold and shake hard... it works
@MARYJ17357 Uhhhhh.... A blender is for ANYTHING, and all my friends' parents use blenders to make sofrito, it's an option it doesn't necessarily have to be a food processor.
i have a pretty good blender and i usually put my garlic. pepper, onion, salt, black pepper, oregano and olive oil in the blender. Those usually blend in less than 2 mins and i quickly add the cilantro, blend and boom! done.
peeling is so easy for garlic. break it apart, and just pound it once with something (i actually use a garlic grinder thing) and it comes off..I can do it all in a minute..
That blended sucks sorry but you need a ninja blender it will save you a ton of time and money ...... Let me know how you like it your welcome ..........Jeff from Chicago
@victormimartin I always make a ton and freeze it. it lasts forever! I usually go through mine pretty quick so i don't really know how long it will stay good frozen but I would say if your not going through it all within 6 months make less :D in the fridge it last for about a month. But the fresher the better! Enjoy and thanks for watching!
I would like to inform everyone that after my last blended broke :( I decided to go the food processor route. The texture is obviously different, but the flavor is still good.. So I recommend you do what you like the best. It is much faster though! :D
@nobracobra Not that I know of, but try making a small portion with out it and see how it goes. It obviously wont be the same but you will still get flavor. Are there any peppers that work for you? if so, throw them in. Who knows you might create something new! :D
28CARARARA, NO CREAS QUE ES DEMASIADO, LA CANTIDAD DE AJO QUE LA MUCHACHA PUSO, ESTA BIEN, YO HAGO EL SOFRITO DE IGUAL MANERA, PERO SIN EL CILANTRO, PORQUE NO SE ME HABIA OCURRIDO ANTES, PERO AHORA SE LO VOY A PONER TAMBIEN
@28cararara usted decide lo que te gusta. A mi me encanta el ajo. Y trabaja bien. Si piensas que tiene mucho ajo para su gusto pon le menos. Se puede cambiar cualquier cantidad para su gusto. gracias!
some ppl are saying that she forgot ingredient. but some ppl add, or subtract ingredient. i know one person, i don't know if is because she is dominican, but she do it different from us the puerto rican, she add to many stuff. i will stick with my puerto rican style. but if she like it like that it ok.
A food processor gets the job done faster but it's more fun using the blender. You get to stop, push the ingredients down so they blend. Make a pitcher of margaritas before you make sofrito and really have fun. I love when the sofrito hits the hot oil and that wonderful aroma fills the kitchen.

Thanks all for watching and all your comments. I would like everyone to know that I have used a food processor before.. I never liked the consistency. I always go back to the blender. Everyone will start to create their own style, this is just a baseline. So if a food processor works for you, or adding more things or removing some things by all means! GET NUTTY! This is simply my method and has worked for me a long time! ENJOY COOKING!
recao is also called cUlantro. LOL I know what you mean about the garlic, but I dont like that kind,it always comes with either too much or too little and the stuff goes bad quickly, and the oil/ already minced kind tastes nasty.
Mamita have you tried using a food processor? I find that it is so much easier than using a blender, at least for me it is.
What do you think about putting the excess into ice cube trays, freezing them, and storing the cubes in a plastic bag? I do that with excess pesto sauce that I make, and then it is available at a moments notice. I would bet that would work just the same, don't you?
@abuelita23xxx That is alot of ice cube trays! lol not to mention the flavor will be lost along with freezer burn and it will smell up your entire freezer.
To much garlic!!

THE REASON WHY YOU HAVE GONE THROUGH 10 BLENDERS IS BECAUSE YOU BLEND THINGS WITHOUT WATER OR OIL! This is crazy!

I'm sorry this might be a dumb questions, but how do you use sofrito? Do you eat it alone?

@lilianalisbeth no it needs to be mixed in before cooking. A question is never stupid unless it's not asked! ;)

jaja nice 00:38... If you can't find recao...then don't even try to do it!! Go back and find it! Some chineese stores sell it.
Recao is also called Culatrón in Guatemala and in English is called: Broad Leaf Parsley.
BTW: what about the aji dulce? I was taught with aji dulce not with green pepper.
Also, instead of water you can use Olive Oil at the beginning you won't have a problem with the blender.

Use a processor though, it will take you a third of the time, and you don't take the risk of chipping your spatula :)
