  • @save11: i only saw him pour out the equivalent of around an ounce of milk. just knocking the thicker foam into the sink. places like this (i.e. that serve high quality coffee) are VERY conservative with waste, not only because it's the right thing to do but because this coffee (and milk) is SO EXPENSIVE. i've seen starbucks and the like waste half a cup of milk on a drink on numerous occasions. i take more of an issue with people ordering 20 oz. lattes. that, to me, is wasting milk/ espresso.

    while on the other side of the world, some coffee farmer don't have enough sanitary water supply.

    Please use less milk to steam and reuse, I do this, and I am sure everyone can do this too!

    speed is not an issue, quality is.

    unfortunately staff costs in Belgium, Europe is too high for this comfort.

  • I think this is compensated by higher prices. Prices people in Belgium arent prepared to pay in, at least not yet cause of the fact that customers are only now discovering the difference between a medium and a good espresso/coffee...
