why soak/drain bones?

@stevensartifacts You wash the bones in order to achieve a less cloudy stock. However, some people might prefer it cloudier, since some say the taste ends up a bit richer.

Interesting method of making fish stock. I like the idea of avoiding the bitterness that can sometimes happen.

@bandgeek12389 It is a gas stove - kind of like the old-fashioned wood stoves, but better controlled. No problems with easy flareups with these.
