DocNOproductions: The fact that this farm is organic (meaning no artificial chemical fertilizers) does not qualify it to be listed as biodynamic. You knew 1 yr ago that the farm is not truly biodynamic in any sense. You should re-label this video as organic farming. Let's be honest about this now.
The great thing about the eggs laid on the farm, or say the oyster shells that they smash comes from their other Luke Brassiere, what i'm saying is Besh Rest. Group doesn't waste any of their resources.
IMO they seem to have a good start in their methobs.. the whey for the chickens are from a local *cheese maker*..guess we won't know whether its organic or not. they also use *powdered milk*.
Do you know what whey is? Whether whey is organic would depend upon how it was made. Were the goats/cows raised organically? Then the whey would be organic.

A biodynamic farm produces food that is unsurpassed in quality and flavor and brings about an actual healing of the soil.
O.K., I have to admit I didn't know about the homeopathic manure or cosmic forces involved in a biodynamic farm, but I do believe this farm is in the 1st stage of being biodynamic and can only grow into what is right (and works) as time goes on.
i'm just the guy who shot the video, but chef Chris, who recently passed away, started the restaurant 30 years ago. he was an amazing man whos eyes and conversation lit up the dining room. He once had an apprentice named John Besh (who he loved to tell stories about and always talked about taking over the restaurant) actually took over the restaurant recently. As i'm sure you know, John has his hands in alot of ventures so chef Steve runs the place. just ate there and had an amazing meal!
Personally, I am an employee of this restaurant and every day I go to work there's always something new and exciting. I'm proud to be a member of this unique way of delivering a dining experience unlike most.
