Yea, when I finally beat her on thr 10th try, it felt really good. And yea, the American version IS better than the UK version. Lol lucky me. But you should fight her on her mild and bitter mode when you beat the whole game on sweet mode. And once you're weapon is upgrader, it won't take as long to beat her. Just keep striking at her before she attacks. Or sidestep her attacks and go for it. =)
