  • First, more then the half part of the starch must be washed aut first. Then one our, the gluten nust be rested. Normal flour turned int a sauce while cooking, or became hard like gum an are not tasty. The amount of gluten must be very high.

    this is probably because the noodle's recipe in each restaurant is trade secret.

    But im pretty sure google will answer your question.

  • @MasterGiegue Have you actually tried it? Googling, I mean. Two of the most reputable recipes out there (one from an American chef and one from a noodle-pulling teacher) are COMPLETELY different. One calls for the lowest possible gluten level of flour and the other for the highest. I've tried both and neither works. Void is right on - the dough makes all the difference. This video is noodle-pulling, but it is not making noodles from "scratch". It's mistitled

    do you know what "from scratch" means? it means you make it from the beginning, meaning you start by making the dough which is the first process of creating the noodles. the dough isn't there magically, it has to be made first to make the noodles.

    do you understand my point now? out of the 74,000 people who watched this video only 13 people bitched about there being no step by step instruction on how to make the dough. that's 73,987 people who probably already know how to make dough. kay?.. it's like i'm talking to a little kid that will never think he's wrong. Once again it's not crap, you just still can't read.

    Not true, finding dough recipes is very difficult. There are many differences of opinion on how to make dough, and the experts aren't giving it up. Some say high gluten flour, some say cake flour. Some say use lye water, others say don't. People "like" the video because it's fun to watch, not because they know how to make dough. Why don't you make a video if you know how it's done? We'd be so grateful.

    If you dislike it so much then why don't you make a 'how to make dough and noodles' video yourself? It wouldn't surprise me if you didn't know how. Even if you could then people would more than likely skip past the dough making tutorial, because unlike you they already know how to make dough. Hench why there's no how to make dough in a how to make noodles video.

If you don't know how to make dough then you shouldn't be watching this video. If you want to know how to make dough then you should search for that instead of how to make noodles.     That's awesome. my previous comment was removed. but did you even read my previous comment? i'll say everything again. this video is called "how to make noodles" not "how to make dough and noodles" if people are searching for a how to make noodles video then they probably already know how to make dough. dough was the first thing i learned i culinary school. it's the most basic and easiest recipe you can learn.

If you are able to be visualized in a public, anyone can take your picture or video you, though you may not like it or want it.

  • people who are grossed out by qualified chefs making quality food with their hands should take a look how the crap they sell at mac donald's is handled. By 4 people a least before in reaches your table.... an hour later sometimes, depending on the manager.

  • He messed up but people who are not chinese wouldn't notice it.. What he did was so so quality on the pulling of the noodle. With that noodle, He used too much dough resulting in, one more stretch which caused the noodles to break.. That's what happens when you switch quality for quantity.

  • hi, what's the difference if I only used (Gold Brand) all purpose flour between Cake flour?.. Because i tried using only all purpose flour and 1 hour of kneeding it still is unstretchable. It can stretch but not that long because it breaks. Help please

  • I love ramen and i never been to an authentic ramen shop so i never guessed how the noodles were cut i always just rolled mine up and cut them with a meat cleaver and it looks like the first guy just got fired

  • How did it turn all noodle-y?

  • Simple.

    You take a piece, stretch it and fold it and stretch it and fold it. by each fold you double the pieces (10 folds = 2048 noodles). At each turn they are doube as much and haf as thick at the last turn, because of the stretching.

    After 12 folds they will be as thin as an elefant-hair :) By the way, try to fold a sheet of paper more than 6 times. You can't. No matter how big the sheet is. Thats math and the noddle makers know it :)
