  • I had to dig this back up and stick it it my watch later I've made this well 5 times counting tonight. Each time I just use what ever I have avail and it always is fantastic. This time no onions in the house, I subed onion powder, some appilacian smoked slab bacon I've had hanging aging for 4mo. , canned shrooms, lots of thyme, added smoked chicken sausage . It rocked hard again.. Did you ever do that cookbook? I'd suggest a whole chapter on this and sauce variations ( love this dish ).

I love the idea of using the fresh tomatoes and kicked myself last night after realizing that I had a bowlful just sitting on the sideboard. Oh well. Make sure that you stir in lots of parm at the end, it will make it creamy and wonderful! Noreen

  • @myspringloaded OH MAN, no bacon : ( Alas, yesterday when I went to the store to pick some bacon up to make this, to my joy they had the store brand center cut bacon on sale for 2.99 a pound. To my glee, many of the packages were marked down an additional $1.00. So a pound of bacon for $1.99! I bought every package they marked down, can you ever have too much in the freezer? Now to hide it from my husband who thinks bacon is a food group! Thanks for wathcing and commenting! Noreen

  • @blairseybell This is what I thought when I saw the recipe, but no eggs and no cream. A little better for the waistline, and I suggested only using 1/2 pound of that bacon, but my husband would have none of that nonsense. Thanks for watching! Noreen.

  • You're right I've got all the ingredients to make this. What size can of tomatoes did you use? 

  • I would have put the onions in first - or at the same time - just me or does that make more sense?

  • @MathewsWire Nope, the onions would burn before the bacon was crisp. 

  • @MathewsWire Actually, it took quite a while for the bacon to cook properly. I had it over medium heat and it took a good 10 to 15 minutes for it to be just right before I added the onions. If I added the onions, they would have been almost burnt and I don't think that is a good flavor. You only want your onions translucent, not caramelized. But if that is flavor you enjoy, go for it, give it a try. Thanks for watching and commenting! Noreen

  • I would have never thought of bacon in spaghetti sauce either. I think the mushrooms were a great touch and I will be making this very soon. Thanks for sharing Noreen it looks amazing and really easy to make! :)

    And just think what could be done with some minor substitutions.... for instance I could substitute some smoked lamb sausage for the bacon, and fresh chopped tomatoes for the canned... mmmm.

  • @hunt1803 That is the wonderful thing about pasta, you can put anything in it and it is yummy! I wish I liked lamb more, never really had it growing up and cannot really get a taste for it as a grown up. I try, but it never really does it for me.   • Looks wonderful! MY mom worked long hrs, 6 days a wk & in her old fashioned way she felt she had to make big heavy meat meals for us each night. When we all moved away she made herself a quick & easy spaghetti based meal ea nite, w/veggies from the garden or some fish etc. When we would stop in she would offer to make us a "real meal", thats when we had to tell her we actually preferred the great quick & simple meals. They're very healthy if a person is a bit careful. Can't wait to try yours.

  • @Pattycakessmiles The simplest meals are always the best, I mean you really cant cook scrambled eggs for Thanksgiving, but you know what I mean right!   • @atticus9799 I know just what you mean, Noreen. My grandmother (born in Italy) taght us very early inlife, the pleasures of simple, good food. Sometimes its just the love and care you show your family. I'm a homemade soup person, but one day last winter I was out, and the day had a chill. My husband and son came in from clearing show and I heated 2 cans of Campbell's Tomato soup that I laced with some cream. They looked at me like I had given them the world. We LOVE your vids!
