he's playing power chords....it depends on how you hol them down....he holds it like it would be a bar chord....muting the rest of the strings...or you can strumm only 3 strings but it's trickier

put your fingers on the 4th fret of the low E string (like you would play that powerchord, but don't actually fret the note). now just pick up and down hard, and with gain you should hear that harmonic come out.
