@serichejr Most of the meat in a feijoada is salted. You need to boil it to remove the salt. But if you're using fresh cuts of pork, sure... just fry them and them add them into the beans to get the flavouring.

There're a few cuts of meat missing in this feijoada... but the most important thing in my opinion that is missing in this video is the final "REFOGADO" ... which gets more flavour and a certain "perfum" to the dish... This final "refogado" is just smashed garlic and minced onions in oil, all fried until it gets almost burned (just until the garlic gets a colour like caramel's),
after ir reaches that point we throw it it at the beans with the meat, and let ir boil for while, so it gets more and more tasty. With the exception of that, this recipe is pretty good.
@andrenassife Hi Andre. I did do that. Check out around 3:14 and you'll see me frying the onions and the garlic. I agree with you completely. It's essential to the taste. Some people like to fry them until they caramelise and others like their 'refogado' a little less toasty. Many thanks for taking the time to comment.

@davidujsce Man, accents are tough. The Americans think i have a British accent and the Brits think I have an American accent. Not being a native speaker my accent seems to change weekly. Sometimes I think I should just speak with a natural Brazilian accent to make things easier.

@Jarbasdesign Well you can't show EVERYTHING on the video. I cleaned them and washed them because I was in Rio. Here in the UK I just open the pack straight into the pan, cause I trust the supermarket packaging here.
and where is a bay leaves. feijoada without bay leaves is not feijoada. I'm brazilian and I ate feijoada all my whole life, in restaurants, families and friends parties, etc. Bay leave will give it a final taste!!!

Como eu menciono a introdução, quando eu faço uma batelada enorme de feijoada (especialmente quando vem gringo que não tá acostumado) eu não boto as carnes mas tradicionais pra não assustar. A couve e outros acompanhamentos não deu pra encaixar no vídeo porque se não ficava muito longo. Mas pode deixar que no futuro eu faço uma mais completa.

Feijoada is an Iberic food. Feijoada was always been made with white beans. Although in Brazil, much later, they made it with black beans which were the ones which grow there.

Feijoada is an Iberic food. Feijoada was always been made with white beans. Although in Brazil, much later, they made it with black beans which were the ones which grow there.

I quite agree. The story I tell on the clip is just the 'popular' story. Just like the story that Cabral discovered Brazil after a storm veered his fleet of course (yeah righ!). I have read historian's accounts that the Portuguese would never give even the left overs to the slaves and that snout, ears or tails were as valued by the slave owners as the rest. Why doesn't he say where it really comes from? These rice and bean recipes originate from Portuguese and Spanish recipes. And that thing with giving the crappy parts to the slaves and that's why it's in the recipe is BS. That's like saying the slaves invented feijoada and that is a LIE. People were already putting that in certain recipes before, including beans and these rice/bean recipes originate from Iberia. I'm so tired of propaganda and false history.
