  • you put salt in the water, then you season the potatoes with salt and then you add bacon and cheese which already has salt in it. Holy fuck.

  • @rossyboy1081 potatoes absorb and need alot of salt. plus you can always do it to your own taste.

I'm Mexican and I really don't know this. Does it give it a different flavor? Bc you're not finishing it off in the oven or anything...

  • @anailelianacarbajal Your not really cooking it in the oven, you're only browning the top and keeping it piping hot in the center. It will take a long time for the heat to cook the inside but by the time it does cook the inside, then the outside will already be burnt .

  • Well, going to a potluck isn't difficult for me. My family is so large, when we get together, the only way we can feed ourselves is to bring a dish. Ah, but this is a wonderfully simple idea! I'll definitely make it for the next get-together.

  • on cold windy fall afternoons with football on and a fire going

    i like to do a version of this by adding a pound of seasoned ground beef or turkey

    and a saute of corn onions and bell peppers.

    it gives the dish an extra dose of comfort food heft.

  • I don't mash the potatoes, just add a bit of butter, crumbled bacon, sliced green onions, and a lot of grated cheddar cheese over that. I serve sour cream on the side, mostly because daddy doesn't like sour cream. It's almost as popular as my deviled eggs.

    Carnation Evap Milk has CARRAGEENAN in it,so I can't tolerate it. Not everyone is sensitive to it, but if someone can't figure out what's triggering their IBS, try a carrageenan rule out, then challenge yourself.

  • You can do anything with this as long as the basics are taken into consideration. You can use anything, yogurt or goats cheese in place of sour cream. If you use goats cheese, mix a little water with it to make the consistency of sour cream.

  • Chef John, that is NOT the right way to cook potatoes. You lose a lot of taste and nutrients this way, as well as using up too much energy. Here's the proper way to do it.

    1. skin, cut in equal size, wash.

    2. put only a little bit of water with the potatoes, so that they are just/just not covered with water. also put some salt.

    3. boil them, WITH LID ON!

    4. if you added just the right amount of water, when they're done you don't have to drain. otherwise, drain the small amount of water.

  • @fmbighair well thanks for posting about it here so others know that it's better to peel them.

    I like unpeeled potatoes when they're good quality, but you need to boil them whole (in only a bit of water, with lid on). This way, the skin contains nutrients and flavor.

    Also good is wrapping them and bake in the oven/microwave/barbecue.

  • @fmbighair they probly wont be as creamy and if you dont want to peel potatoes with a knife, cook them first and then, with your hands, peel them and the skin should come right off

  • Mmmm.... twice baked potatoes! I actually make this! HUGE fan of evaporated milk and use it for everything. In my recipe, I add roasted cloves of garlic and corn. Always goes over well!

    lol try putting Milk,sourcream and butter together than whisk it.

    then add it instead of the carnation if you don't have evaporated milk.

  • No. Whatever you like will work as long as you keep the measurements the same

  • Idaho works best actually. Each kind of potato has a different starch content.

  • Yum! Try boiling the potatoes with a medium/small peeled whole onion. discard the onion when potatoes are cooked. Makes for another dimension to this dish. I love it!

    Anyway, I find that crispy bacon, when mixed in the mashed potatoes lose a bit of the crispiness, I used to fry bacon that is just cooked and mix them in my taters, but I think I'll add crispy bacon on top in the future.

  • Annoying skin!!!! No way - baked potato skins (if baked properly) are the BEST part of the potato, especially if you've had the filling with butter and cheese, so that there is still some butter and cheese left of the plate!! omg, I am so hungry for a baked potato now!
