  • If you don't have parchment paper, rub shortening in the pans then dust them with about two tablespoons of AP flour and dump out the xtra. The only hitch is you have to turn them out while the fat is still hot, but that's not much of an issue.

  • Coulda used coconut oil instead of the butter.

  • @allencrider Since you cannot cream oil with sugar, so you would have to use the muffin method. and oil is 100% fat. butter is 80-85% fat and 15-20% water/milk solids, so you would have to make proportion adjustments of fat and liquid. Basically you could but it would be a totally different cake, and there is plenty of coconut flavor in this cake already (ive made it and its great), that i don't think it is necessary.

  • I followed this exact recipe and the layers came out caved in and were harder than hell to get out of the pans. I also made the 7 minute frosting and it was as watery as water when i finished beating it on the last minute. it never set to a thick delicious frosting but to a weird white mess.

  • like what is said @ 2:35 - 2:41, it is true that there are a lot of coconuts harvested here in the Philippines. it is one of the country's main industries, but coconut cake is not that popular here.

    Buko Pie (translated "Coconut Pie"), however, is the Filipinos' most known dessert usage for coconuts.

    But for me, i prefer a drink of coconut water/juice than munching on the meat of the fruit.

    Secondly, the first year I made the cake I used two 8 1/4 inch cake pans instead of the two 9 inch cake pans the recipe calls for. The second year I went with the 9 inch ones. I would recommend using the 8 1/4 inch ones because it makes the layers thicker and less likely to break when it comes time to move them. It also makes the finished cake taller and WAY more impressive.

    Thirdly, I believe that the first year I confused the coconut cream and coconut water in the recipe. Instead of combining "the coconut milk and coconut cream in small bowl", I combined the coconut milk and the coconut water. (I still sprayed the coconut water on the cakes instead of coconut cream.) I think this made for a sweeter cake (and possibly and more moist cake but that could be contributed to the pan size) and I recommend trying it in a second or third attempt at the cake.

    I hope these helped. Making the cake overall is not too hard but it takes a lot of time and patience. It is SO worth it though. The hardest part is probably cutting and moving the layers. The most fun part is making the seven minute frosting! Good luck!

  • I think this is pretty similar, if not the same recipe as the cake he featured on Feasting on Asphalt, the one that he went absolutely crazy over.

  • I made this. The cake itself is pretty good. The icing is a little sweet for my taste, but my mom liked it. It does take half a day though.
