@allencrider Since you cannot cream oil with sugar, so you would have to use the muffin method. and oil is 100% fat. butter is 80-85% fat and 15-20% water/milk solids, so you would have to make proportion adjustments of fat and liquid. Basically you could but it would be a totally different cake, and there is plenty of coconut flavor in this cake already (ive made it and its great), that i don't think it is necessary.

Secondly, the first year I made the cake I used two 8 1/4 inch cake pans instead of the two 9 inch cake pans the recipe calls for. The second year I went with the 9 inch ones. I would recommend using the 8 1/4 inch ones because it makes the layers thicker and less likely to break when it comes time to move them. It also makes the finished cake taller and WAY more impressive.
Thirdly, I believe that the first year I confused the coconut cream and coconut water in the recipe. Instead of combining "the coconut milk and coconut cream in small bowl", I combined the coconut milk and the coconut water. (I still sprayed the coconut water on the cakes instead of coconut cream.) I think this made for a sweeter cake (and possibly and more moist cake but that could be contributed to the pan size) and I recommend trying it in a second or third attempt at the cake.
I hope these helped. Making the cake overall is not too hard but it takes a lot of time and patience. It is SO worth it though. The hardest part is probably cutting and moving the layers. The most fun part is making the seven minute frosting! Good luck!

Alton took some parchement paper;fold, fold, fold, fold; took the diameter of the pan, the cut.
Spread some non-stick spray or butter/shortening dusted with bit of flour.
