Nice work. But you bring the egg off the heat when they start cooking too fast, and you want the process to slow so you don't end up with egg sticking to the pan or browning. As soon as the eggs start just stirring and nothing catches on the bottom of the pan or around the edges you can chuck it it straight back on the heat. Ramsay has the heat on high the whole time and alters the cooking by moving the pan rather than adjusting the heat.
You are not a pro yet to use one hand.

I don't like teflon or other nonstick cookware. The coatings are fragile and come off into your food.
If you don't let the eggs burn to the pan, stainless steel works well. That is what Gordon Ramsey was using in his video.
