@992kirky Compared to hard bread rolls which are usually mixed for 10-15 mins by a mixer, 3 mins seems like just enough time to allow all of the dry ingredients to absorb the water with minimal gluten development. Furthermore, resting relaxes the gluten strands created while kneading. Natural yeast in the air also contributes to the tenderness. It wasn't handled enough to pass a window pane test, so I imagine they were very soft as evidenced by the puff level while cooking.
I just made these. My 2 1/2 year old son couldn't wait for these to cool down. Easy to make. I used vege oil and still very tasty. I will never buy flour tortillas again at the store.

Rolling a tortilla out on a granite countertop is not going to pose a significant radiation hazard in the home. Get a science education, fer cryin' out loud!
I'd be careful about rolling out the dough on that granite counter top... check with whoever installed it and double check that it is ok to use. Some granite used in counter tops release small amounts of radon =(

The end product looks good. Wouldn't the hot water cook the flour a bit? Why did you use very hot water as oppose to warm? I would think that the dough would be partially cooked with the hot water.
You did a great job, you can make the rolling process a bit easier with the tortilla press though. They cost 12-20 dollars and work miracles. Thanks for posting.

Great recipe! Although, I needed to add more water to get a pliable dough. Probably because I was using a different flour. I used Canola oil instead of shortening. It was fun to make, and I am very very pleased with the tasty tortillas!

i've tried to make them, but with out the baking powder and the vege short (don't know what it is) so, just flour water and salt, to make them a bit more "light" but they came out rubbery

@ronniedg44 the missing ingredient that you need is lard thats what they used back then. Lard gives the flavor to the tortilla you could even incorporate a tablespoon of bacon grease with the lard. Also if you want in a cast iron pan or skillet heat up an inch of oil, roll out the tortilla and place it in the hot oil and you have sopapillas or fry bread. Pretty neat huh. Oh Walmart has the tortillas that all you do is cook them on a griddle for tortillas or as sopapillas is that cheating LOL

I just wanted to say thanks. I'm from south Texas but I'm in the military stationed in japan. My mom always made homemade tortillas but she was so use to it she would never measure anything out. im not sure why people use fat in tortilla wraps recipe. I never use any fat or baking powder and they turn out fine. once i tried adding some fat and it made them cook more like pastry texture. i never add any shortnening and they seem perfect. I have also found turning cooking them in a pan turned upside down works better so you cook them on the bottom of the skillet which is totally flat and has no raised edges. it works better
Hi, I was wondering if you know anything about a cloth or fabric that mexicans use to keep the tortillas warm. I know it's called something that sounds like sarbageta or sarbajita. or maybe it's two words like sarba jita?? If someone knows, could you please tell me. I actually want to decorate one myself.
I've made a few batches of this recipe and last time, what I did was instead of 3 1/2 cups of flour, i only put in 3 and then added a half a cup of corn flour. This gave it the easy to work with properties of wheat flour but gave it a slightly Mexican corn tortilla taste. I encourage everyone to try it.
OK, you tortilla making gurus... My tortillas always shrink. I roll out this beautiful 9 inch tortilla and as soon as I pick it up to cook it starts shrinbking. As it cooks it shrinks down to maybe 5 inches and gets really thick.... How can I stop this from happening. It does this either rolled or pressed in a tortilla press BOTH,,, commercial flour or homemade dough they BOTH do this. Anyone know why and willing to help? Please!!! :-)
@Landotter1 in order for the tortilla to maintain its flattened shape the dough must be rolled until the gluten strands break down. Im guessing this may be your problem

im gonna try rolling mine out to the the size of my oven in a square shape and lay them on the rack and cook a massive large one and fill it then cut it into individual servings. it doesnt have to be round
@EmoraChan13 . .well I know that . . . but usually when a recipe is posted you kinda sorta list the exact amount needed. What I was trying to find out if 1 cup of water is listed, then why would it need more. I was just curious if there was a special mixing technique or something.
@jdlocotxftw2002 ...in older times, people didn't always measure. It's still that way today. Add water bit by bit until it's soft and malleable enough for you to use it.
@abrahamdiaz19 Actually, some people (myself included) are overly sensitive to the taste of baking powder when it's used in large quantities. It tastes like metal to us. Strange but true.
@aly21709 Thanks for the reply, in Italy we often use fresh yeast, which is natural.But the desserts are now widely used in powder which I think are always based on baking soda to the speed of preparation, once expected to rise naturally enough :-)
@846524162 - I know it should be used for cakes because often is decided in a hurry to do it, but I see that sometimes you use too much. Here, in south Italy, we use to make bread with yeast, flour and water. The same goes for the vinegar, the wine is left to ferment, ne storijo enako?. All you need is time and there is no need to use chemical things.
@deahera Oh so you think baking powder is too much chemical, I know what you mean. I personally don't think that way, when yeast is in recipe I use yeast and when there is baking poweder, I use baking powder. Storijo enako :)

Hi, I was wondering if you know anything about a cloth or fabric that mexicans use to keep the tortillas warm. I know it's called something that sounds like sarbageta or sarbajita. or maybe it's two words like sarba jita?? If someone knows, could you please tell me. I actually want to decorate one myself.

I've made a few batches of this recipe and last time, what I did was instead of 3 1/2 cups of flour, i only put in 3 and then added a half a cup of corn flour. This gave it the easy to work with properties of wheat flour but gave it a slightly Mexican corn tortilla taste. I encourage everyone to try it.

OK, you tortilla making gurus... My tortillas always shrink. I roll out this beautiful 9 inch tortilla and as soon as I pick it up to cook it starts shrinbking. As it cooks it shrinks down to maybe 5 inches and gets really thick.... How can I stop this from happening. It does this either rolled or pressed in a tortilla press BOTH,,, commercial flour or homemade dough they BOTH do this. Anyone know why and willing to help? Please!!! :-)

@Landotter1 in order for the tortilla to maintain its flattened shape the dough must be rolled until the gluten strands break down. Im guessing this may be your problem

im gonna try rolling mine out to the the size of my oven in a square shape and lay them on the rack and cook a massive large one and fill it then cut it into individual servings. it doesnt have to be round

@EmoraChan13 . .well I know that . . . but usually when a recipe is posted you kinda sorta list the exact amount needed. What I was trying to find out if 1 cup of water is listed, then why would it need more. I was just curious if there was a special mixing technique or something.

@jdlocotxftw2002 ...in older times, people didn't always measure. It's still that way today. Add water bit by bit until it's soft and malleable enough for you to use it.

@deahera You can leave it out, but they won't puff up as much as when you add it. Flavor wise it is the same with our without it.

@abrahamdiaz19 Actually, some people (myself included) are overly sensitive to the taste of baking powder when it's used in large quantities. It tastes like metal to us. Strange but true.

@aly21709 Thanks for the reply, in Italy we often use fresh yeast, which is natural.But the desserts are now widely used in powder which I think are always based on baking soda to the speed of preparation, once expected to rise naturally enough :-)

@deahera What do you, don't like baking powder? What it's not to like about it? :D If you don't use it, the dough won't rise and it will stay flat.

@846524162 - I know it should be used for cakes because often is decided in a hurry to do it, but I see that sometimes you use too much. Here, in south Italy, we use to make bread with yeast, flour and water. The same goes for the vinegar, the wine is left to ferment, ne storijo enako?. All you need is time and there is no need to use chemical things.

@deahera Oh so you think baking powder is too much chemical, I know what you mean. I personally don't think that way, when yeast is in recipe I use yeast and when there is baking poweder, I use baking powder. Storijo enako :)
