So, I'm wondering why kosher salt. What is wrong with iodized salt, better for your thyroid. Another question, what do the food rules say about turkey.Koser or other wise.

When your looking down a camera and trying to say everything just right And do everything just right its easy to over look something you normally do. I have worked in many Restraunts and if you knew what went on in the back. You would spend more time at home cooking your own meals.

I look for things that are easy to make. Something I do not have to spend a lot of money on as far as extra spices and such. I never cooked a trukey before. I watched this video many times and try it. I have to say Chef Hosea R. is AWSOME !!! My family loved it. Thank You !!
just moved to the jersey shore in toms river n.j. and there are no whole foods markets anywhere nearby very disappointed about that especially because i have to got to multiple stores just to purchase everything i used to at whole foods

I used this video last year to make a Christmas turkey and it was the best turkey dinner ever. I didn't add the carrots and celery, but the Thyme, salt and pepper gave it a delicious, simple flavor!

He did it all wrong, he suppose to stuff it with hot dogs and hamburgers submerge the it in oil and cook it for 5 hrs. It should be served with Crisco pies and fried butter sticks.

Great video, This is how I will be cooking my turkey this Thanksgiving 2010. One side note to some of the other comments. If he touched the turkey and then the stuffing really makes no difference, the stuffing is going inside the turkey and will be cooked with it. You will have as much of a chance catching something from the "cooked" stuffed vegetables as you would the "cooked" stuffed turkey.
Okay for example he touches the bird with his left hand at 1:36. We cut to another spot of him touching the stuffing. I don't have time to watch the entire clip but if you have some specific times please let me know.
Did he ever wash his hands? I'd hate to be the next person in that kitchen. The pepper grinder, the butter dish, the salt and every other surface he touched would be contaminated with Salmonella, Campylobacter etc...

However, the main point of the video wasn't, "How to prevent salmonella, and campylobacter when cooking your Turkey" it's "Thanksgiving Turkey Made Simply Delicious" and I know what you're going to say, "There is nothing delicious about contaminated food". It's true there isn't but lighten up. He isn't a sloppy Chef, he used only one surface while preparing his turkey and that looks like cross-contamination prevention to me. It's the holidays! Relax...
Sigh...okay, once again, understand where I'm coming from. I'm a Health Inspector. Maybe I see it and you don't. Watch his hands. Cross contamination is from one surface (including hands) to another and the most common source of contamination in a kitchen. I know I'm a buzz kill, but so is foodborne illness.
If you cut your hand while preparing the food, wash your hands (even the cut) thoroughly and apply a sterile bandage (use topical antibiotic if you wish). If you are preparing food with the bandage on, I'd recommend a glove to prevent 1) Contaminating the food, and 2) infecting the cut.
Obviously don't use any veggies that may have been contaminated by blood, that's just gross! The turkey should be okay, it's dead anyway and will be cooked to proper temp.
@murdocha it's called cooking, it kills the bacteria...also no form of any kind of cross contamination in this video, whoever you're working for as a health inspector should probably fire you since you don't know what you're talking about.
@kl4y kl4y Yes, cooking kills bacteria, as long as internal temperatures are maintained. Cooking does not destroy the heat stable toxins produced by many kinds of bacteria while they grow. This is one of the concerns with proper cooking and avoiding cross-contamination.
If you missed the cross contamination I suggest you watch again. Any handwashing? He handled raw turkey externally and internally then the bowls, brush, pepper grinder etc. All those surfaces are contaminated. Good temps though.

hey guys, im just curious...
what happens when u dont have gloves on (like the chef in this video)?
i wash my hands before and after i touch my turkey but the thing is i cut my index finger while preparing the veggies...
so obviously, i touched the turkey with my clean hands but im just curious about my finger that has cut...
will it affect the turkey and our health as well?...
