No, as I was playing on the Easy difficulty on the PlayStation 2 version of the Mega Man Anniversary Collection. Regardless of playing on either the Easy or Normal difficulty settings for the compliation, Mega Man 2 on it can act more like the Difficult setting of the original NES version, meaning that Metal Man can't be killed in one hit by the Metal Blade and enemies can act tougher (seemingly like the column enemy, which might've had an official name, you've mentioned in your comment).

For capturing from a actual console, hook-up devices (such as capture cards) and programs like Dazzle, the "Capture Video" feature in Windows Movie Maker, and Muvee autoProducer would be required. You can research for the best method for your preference around the Internet.
This could be especially true if the rapid fire feature were used against him and easy mode was set from the collection, but otherwise he's about the same difficulty as he was in the NES original game (but the compliation acts as if Mega Man 2 is always set on the Normal difficulty, so Metal Man can't be killed with a single hit from the Metal Blade weapon in it).

There isn't any remix music available for Metal Man's stage in Mega Man Anniversary Collection, at least for the PlayStation 2. This stage was one of the several tracks left unremix among those in Mega Man, Mega Man 2, and Mega Man 3 in the compliation.
You're welcome. Keep in mind that the game compliation itself was developed by Atomic Planet. It is suspected that some of the stages were left unremix for the reason to save space on the disc. Also, the GameCube version has no remixed tracks available for any of the NES Mega Man games included.

I can remember almost losing to Metal Man over a decade ago but that was on the NES. Doubt you could do that on the PS2.
