Kalimari is an italian cuisine. Traditionally, *and i know this for a fact b/c my father is a chef and italian at that!* fresh squid is separated with a knife, the legs and the head the head is chopped into rings after its cleaned, and the legs are usually used in seafood salads more than they are in entrées. The rings are fried in oil after being dipped in flour, eggs and breadcrumbs and then served w/ sauce anything from marinara to spice sauce. its one of my favorite anitpastos before a meal.
