  • FRESH AND WHOLESOME FALAFEL

    (from Scratch !)

    ITEMS NEEDED

    1 x Food Processor

    1 x spatula for food processor

    1 x deep fryer (or deep pan) with about 50mm oil minimum

    2 metal tablespoons

  • INGREDIENTS 2 x cups raw chick peas (not canned, defeats the natural flavours!) 2 x large bunch fresh Parsley (flat leaf Italian / Leb) very coarsely chopped. 2 x large bunch fresh Coriander very coarsley chopped 2 x medium brown / white onions very coarsley chopped 3 x clove garlic very coarsley chopped 1 x Tsp Cumin - whole 1 x Tsp Cumin - ground 1 x Tsp Coriander seed - whole 1 x Tsp Coriander seed - ground 1 x Tsp Salt 1 x Tsp Lebanese Pepper Chilli (optional)
  • METHOD

    1. Soak Chick Peas in about 6 cups of water for at least 10hrs

    2. Place chick peas into food processor (2 - 3 separate batches) and blend till consistency of dry mashed potato achieved. Use spatula to keep cleaning sides and base of processor.

    3. Place all blended chick peas back into the Food processor and then add remaining ingredients bit by bit till processed together - i.e. Parsley, Coriander, Onion, Garlic, Salt & Spices and (optional chilli).

  • 4. When all blended together, consistency should be like slightly dry mash potatoes.

    5. Empty blended ingredients into a bowl.

    6. To save time when cooking, you can make the falafel into balls / ovals / patties beforehand.  Try not to make them more than 30mm thick.

    7. Heat oil to nearly smoking and insert falafel.

    8. Try to turn once only and exterior should be golden brown

    9. No problems if 'over' cooked, the exterior becomes 'crisper'

    10. Drain well.
