Hey, Iam married to a tamilian who loves his mor kolumbu and after trying ur recipe he told me my mor kolumbu is better than what his mom makes :-) ..Thanx a lot!!!!!!
I truely enjoi ur recepies sir.. they are simple made and good .. I love such simple cooking..thanks for ur videos and hope to see more of ur videos in future n keep up the good work...But, sir my mom also adds dry dhania seeds n lil jeera while grinding..n also red chillies..since im a tamilian..married to a karalite i make both ways :) but they put lotta coconut..i usually avoid coconut.even for the mor kolumbu u made..but in theirs cant avoid...main thickening agent for them is coconut.. :(
thank you very much for your kind and encouraging comments ... i've tried with dried dhaniya seeds and even with red chillies.. they do taste good and some people prefer it .. but green dhania is my preference; and for thickening, the choice between coconut and chana dal ( which i prefer ) is personal .. and what do you know, if you dont use coconut, the economy of kerala will be in shambles ! :-)
i'm sure you will like it, it is liked by most people and is almost a dish of choice in festivals and celebrations here in south india.. and btw, if the yoghurt is not slightly sour be sure to add a dash of lime ( lemon ) juice in the end ...all the best ..:-)
looks delicious. May I ask you, what is the first item u added before curd and is it possible to replace buttermilk with other substance?..sorry, just don't know what buttermilk is, never used it before..
yes it is delicious and is almost always made on special occasions like festivals etc...'mor' is buttermilk is liquid yoghurt ..to get liquid yoghurt you add a little water to yoghurt and beat it with a fork or even a blender..preferably the yoghurt should be slightly sour...if it is not sour then you could add some lemon juice in the end ..the first item added is black mustard seeds, a very common spice in these parts ..i'm sure you'll love it's taste ..do try it out ! :)
I feel that instead of adding coconut to the mixture, it's better to grind it along with the masala. Will this be okay or could we omit adding the coconut totally?
i've tried it both ways, and found not much difference in taste, whether you grind the coconut with the masala or while boiling them together... yes you could omit the coconut altogether, but i add the coconut for two reasons, first that it adds a slight flavour to the mor kolumb which many like, and second it masks the sometimes unpleasant smell of over sour buttermilk... also it has the effect of mellowing the effect of raw chillies.. but yes, you can omit add the coconut totally ...thanks !
The recipe is definitely awesome, but i have a question Sir!
After adding grinded mixture to the okra, within a minute you added buttermilk. So the dish will retain the raw taste or smell. Can we keep the mixture for longer time?It might stick. Please answer to me. No hurry.
ofcourse you can keep it for longer.. however you lose the taste and flavour of the masala and there is a risk that the butter milk will split and give a rather split milk appearance ( though the taste will be ok ) and it wont stick.. there is cookingoil in the shallow frying dish to take care of that part ..all the best ...
yes .. but as you can see .. i suggested that you turn off the flame and then add the buttermilk .. so it wont split .. even if it splits it tastes ok .. but it would appear not so good
youre welcome, yoursnilu,, and yes many people consider this a great delicacy and indeed this was a compulsory item in traditional feasts during festivals and marriages..
