That is a "loaded" question and one that to be answered in depth would require some time. But suffice to say we are way beyond "thinking" that gluten causes autoimmune disease. The facts are fairly irrefutable with certain diseases.
Do understand that celiac IS an autoimmune disease itself and its association with diabetes and thyroid disease, as an example, is well documented.
"How" it occurs is well explained in my book, "The Gluten Effect".
I hear A LOT of speculation about "gluten" causing autoimmune diseases. My question is...how do you know? Why is it that we "think" gluten causes this? and...is their any proof of this??
@christenstjohn If you have Celiac disease and stop eating gluten... You know without a doubt. I can tell you with certainty that every single time I get any speck of gluten contaminates on my food that within the day I will be experiencing pain and lethargy. As soon as I am back to strict control of gluten my digestion improves, skin tone, energy levels and general sense of well being. Before going gluten and casein free I got Bronchitis every year. Not anymore. It is crystal clear to me.
