try adding adding kashmiri red chili powder and a 2/3 pinches of sugar... please make it really clear that a little bit of sugar enhances the color of the gravy(very few chefs know this fact including my mom) so do not put it more than 2/3 pinches.

1st why are you using garlic paste chili paste and coriander powder?
these should all be used as fresh ingredients not processed garbage
2nd how can you not season the chicken before putting it in?
trust me try seasoning it first with green seasonings, salt pepper and then tell me how your curry tastes
oh in response to the question below, i wouldnt add the onions later it would be weird to have crunchy onions in curry

The Potatoes take longer then just a few minutes to finishes cooking.. Chop them up smaller.
