@Yourpasswords Your theory is flawed: Alduin, firstborn of Akatosh, was NEVER immune to death. Paathunax, his brother, is a testament to that. Dragons can live forever until someone comes along and kills them. How he survived the first time you fight him was probably a way for Bethesda to make the final showdown epic, I.E. a battle in Sovngarde (heaven). He was in physical form still, so was the Dragonborn, and he had nowhere else to run to. Plus, Dragonborn had help.
