One thing I do when skinning animals big enough to do so,including rabbits, is to stick my index & middle finger into the incision to pull the skin away from the meat so as not to let the knife slip and cut into the innards which would allow the meat to be contaminated.

We have a big groundhog problem and we've been shooting them for years. Just cleaned my second one ever tonight, and it took over an hour. Getting the pelt off and the guts out intact was easy. The part I struggled with was getting the skin off of the meat... Do you know if I were to boil the meat, if the skin would become real loose like it is on chicken?

I have a Remington air rifle, 950fps, I load it with a lead hollow point .177, put it right up to the rabbits head and fire. The rabbit will never know what it it. Just make sure you get the brain, they're so tiny its easy to miss.
